Captain Demo’s Big Truffle Aioli: An All-Purpose Flavor Enhancer

YO…..You wanna PIZZA ME!  It’s Captain Demo…..ready to guide you through crafting an all-purpose aioli that will transform any dish from ordinary to extraordinary. Put this on a shoe….you’ll get promoted. It’s that good. Today, we’re whipping up a batch of our Signature Captain Demo’s Big Truffle Aioli, using a mix of homemade techniques and a trusty standby. This aioli is versatile enough to top off everything from crispy fries to gourmet pizzas, just like our friends at Dominick’s Pizza have been doing since 1963. Get ready to elevate your culinary creations with this simple, yet superbly flavorful kicked-up sauce!


For Homemade Mayonnaise Base (Optional)

- 2 whole eggs

- 1 tablespoon sherry vinegar

- Juice of 1 large lemon

- 1 teaspoon kosher salt

- Freshly cracked black pepper, to taste

- 1 cup great olive oil (for drizzling in slowly)

For the Aioli

- 12 ounces homemade mayonnaise or Hellmann's mayonnaise

- 1 large garlic clove (or more, to taste), finely minced

- 3-4 tablespoons Captain Demo’s Big Truffle Sauce

- 2 tablespoons chopped fresh parsley

- 2 tablespoons chopped fresh chives

If Making Homemade Mayonnaise

  1. In a Bingham's blender, combine the whole eggs, sherry vinegar, lemon juice, salt, and a bit of black pepper.
  2. Start the blender on a low setting and slowly drizzle in the olive oil, gradually increasing the speed of the blender. This process helps emulsify the mixture, creating a thick, creamy mayonnaise. Continue blending until you reach the perfect viscosity.

Preparing the Aioli

  1. If using prepared mayonnaise, place 12 ounces of Hellmann's mayonnaise in a mixing bowl.
  2. Add the minced garlic and Captain Demo’s Big Truffle Sauce to the mayonnaise. Stir thoroughly to combine all ingredients into a smooth, rich aioli.
  3. Gently fold in the chopped parsley and chives, adding a touch of elegance and a burst of fresh flavor to the sauce.

Serving Suggestions

-For Fried Foods, Drizzle or dip crispy shrimp, fish, and French fries in this aioli for a luxurious twist.

-As a Salad Dressing. Thin the aioli with a bit more lemon juice or vinegar and toss it with your favorite salad greens.
