Often underrated, chicken thighs are a treasure trove of flavor, especially when dressed up with Captain Demo’s signature Big Truffle Sauce. They’re easy to prepare, forgiving in the oven, and perfect for a hearty meal any day of the week. Let’s dive into a dish that showcases simplicity with a dash of elegance and a whole lot of flavor: Roasted Chicken Thighs with Big Truffle Hot Sauce. You literally can’t screw this up!


- 6 chicken thighs, skin-on and bone-in

- 2 tablespoons good olive oil

- 6 cloves of fresh garlic, smashed

- 1/2 bottle of Captain Demo’s Big Truffle Hot Sauce (or about 6 tablespoons)

- Zest of 1 large lemon

- Juice of the same large lemon

- Salt and freshly cracked black pepper

- 1 tablespoon butter

- A dash of Worcestershire sauce

- 1/2 cup of white wine or red wine for reducing

- Aluminum disposable pan for baking


Marinate the Chicken

  1. In a large bowl or resealable zip bag, combine olive oil, smashed garlic, Captain Demo’s Big Truffle Hot Sauce, lemon zest, lemon juice, a dash of Worcestershire sauce, salt, and pepper.
