They’re easy to prepare, forgiving in the oven, and perfect for a hearty meal any day of the week. Ingredients

- 6 chicken thighs, skin-on and bone-in

- 2 tablespoons good olive oil

- 6 cloves of fresh garlic, smashed

- 1/2 bottle of Captain Demo’s Big Truffle Hot Sauce (or about 6 tablespoons)

- Zest of 1 large lemon

- Juice of the same large lemon

- Salt and freshly cracked black pepper

- 1 tablespoon butter

- A dash of Worcestershire sauce

- 1/2 cup of white wine or red wine for reducing

- Aluminum disposable pan for baking


Directions:


Marinate the Chicken


  1. In a large bowl or resealable zip bag, combine olive oil, smashed garlic, Captain Demo’s Big Truffle Hot Sauce, lemon zest, lemon juice, a dash of Worcestershire sauce, salt, and pepper.
  2. Add the chicken thighs and ensure they are well coated with the marinade. Let the chicken marinate for at least an hour, or for best flavor development, leave it overnight in the fridge.

Roasting the Chicken

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the chicken thighs skin-side down in a non-crowded aluminum disposable pan. This ensures easy cleanup and even cooking.

Prepare the Sauce

  1. Once the chicken is cooled, transfer the pan juices to a saucepan and add 1/2 cup of your preferred wine (white for a lighter sauce, red for a richer flavor).
  2. Bring the mixture to a simmer and reduce until thickened slightly.
  3. Finish the sauce by whisking in a tablespoon of cold butter. This will give your sauce a lovely gloss and rich flavor.
